Vanilla Pancake

30.11.2013 - Batam.  Pancake is my son's favourite breakfast.  He loves pancake with peanut butter and i love it with honey / maple syrup & unsalted butter. Any way it is all delicious.

Today i make a vanilla pancake for my son.  Its simply easy and smells of vanilla just add more lovely smell on the pancake! I just love it.

For this pancake, i don't make a thick pancake but i make sure it has the fluffy texture and very soft pancake.  If you want a thicker and fluffier pancake, just simply add 1tbsp of baking powder instead of 1/4 tsp and if you add water, use mineral water that contain a lot of air bubbles.  and you will get a fluffier pancake.  and lastly to make sure your batter isn't too watery.




INGREDIENTS
1 cup cake flour/ all purpose flour
1 cup fresh milk, mix accordingly one at a time, batter should not be too runny or watery
1/4 tbp baking powder
dash of salt
2 eggs, separate
1tbsp sugar
1tbsp - vegetable oil/melted butter
1tbsp - vanilla essence

METHOD
* sieve flour.

* in a bowl, add in sieve flour, sugar, baking powder, milk, melted butter, salt and egg yolks. Mix to combine.  Batter should be thick not watery.

* Beat egg white till soft peak. Add in egg white into batter.  Mix well and lastly add in vanilla essence, is ready to cook.

* Heat non-stick pan, very low medium fire, use a kitchen towel dip in some cooking oil and rub over pan.  scope 1 soup spoonful batter into pan, let it cook slowly till batter bubble on top means cooked and turn on the other side let it cook throughly until golden brown, dish up.

You could see all that lovely air bubbles that makes the pancake so fluffy!



When you see bubble up, means cook and time to turn the other side.
